175ml sunflower oil
3 large eggs, lightly beaten
140g grated carrot (about 3 medium)
100g chopped walnuts
Grated zest of 1 orange
175g self-raising flour
1 tsp bicarbonate of soda
1 tsp ground cinnamon
½ tsp grated nutmeg
Preheat oven to 180C/ Gas 4/Fan 160C
Oil and line the base and sides of an 18cm square cake tin with baking parchment.
Tip the sugar into a large mixing bowl, pour in the oil and add the eggs. Lightly mix with a wooden spoon. Stir in the grated carrots, walnuts and orange rind.
Mix the flour, bicarbonate of soda and spices, then sift into the bowl. Lightly mix all the ingredients – when everything is evenly amalgamated stop mixing. The mixture will be fairly soft and almost runny.
Pour the mixture into the prepared tin and bake for 40-45minutes, until it feels firm and springy when you press it in the centre. Cool in the tin for 5 minutes, then turn it out, peel off paper and cool on a wire rack. (You can freeze the cake at this point.)
EkoSkola 6th Young People’s Summit on Climate Change was held at Mediterranean Conference Centre and Fort St.Elmo on Tuesday 26th April, 2016.
Our students got the opportunity to listen to a number of speakers talking about ways which could impact our climate and how we can improve the situation.
As a Centre we had the opportunity to attend to the Design and Technology Expo where various interesting exhibits were set up by students from various Colleges around Malta. From such exhibits one could notice the great effort placed to improve and come up with technological innovations and advances after a series of research and studies. Our students had the opportunity of experiencing most of the workings of such exhibits and try for themselves as to get a better understanding of the functional aspects behind such exhibits; being the push of a button or the pull of a lever.
We had also the opportunity to be present for the unveiling of the replica of the BB-8 robot. For the passionate followers of Star Wars, the BB-8 is the droid character which made its first appearance in the 2015 film; Star Wars: The Force Awakens.
Thus, the Design and Technology Expo was a true festivity of creativity at its full and served as an opportunity to enable the analytical aspects of the human mind to get working. Such an event gave our students the sterling opportunity to exercise their creative side and we are all looking forward to attend and participate in events like this.
